  1. Grind cinnamon stick and flax seeds to make fine powder. To this add 1/4 cup water, mix well and keep aside. This is flaxmeal, a substitute of egg.
  2. Mash banana in a bowl using fork and make a smooth batter.
  3. Grind jaggery to fine powder and add it to mashed bananas.
  4. Next add virgin coconut oil and mix well.

  9. Once raisins are coated in the flour, fold dry ingredients into wet ingredients.
  10. Grease the bread loaf tin with coconut oil, line it with parchment paper and transfer the batter into tin. Level it evenly using back of spatula.
  11. Lastly sprinkle some chopped cashews, flaxseeds and oats.
  12. Bake it in the preheated oven at 180°C for 15-18 mins. Once baked, let it cool for 20 mins before slicing.
