I LOVE eggs benedict so played around with six different light versions to come up with the best! Eggs Benedict is a classic breakfast dish that usually includes an English muffin, poached eggs, Canadian bacon or ham and hollandaise sauce that's made with egg yolks, butter and lemon juice. The best part of eggs Benedict is the rich hollandaise sauce.

Instructions to make Healthy Egg Benedict:
  1. Boil Water
  2. Add the following to the blender: 1 avocado, some warm water and apple cider vinegar, virgin olive oil and salt & pepper. Purée until smooth and soft.
  3. Cut one slice of a tomato and add to a plate, and add the 2 slices of turkey on top (this will be the bed for the egg)
  4. To the boiling water, stir with a wooden spoon to create a whirl inside the pan. Then, crack and add the egg inside. (Look how the egg white starts wrapping around the yolk - this is due to the whirl you created). Take egg out once it is ready.
  5. Add egg on top of the tomato and turkey bed
  6. Add purée sauce created on top of the egg
  7. Add some mozzarella cheese
  8. Enjoy!
