- Chop/ dice all veggies, set aside
- Heat skillet (non stick skillet)or use cooking oil spray to spray skillet before heating
- Place veggies in skillet and allow them to saute
- Add seasoning while cooking: black pepper, garlic, parsley, smoked paprika, Italian seasoning & a pinch of pink Himalaya salt. Set aside when done
- In a small bowl wisk eggs & tsp of milk. Pour in heated skillet. Once the egg batter began to bubble at the bottom add sauteed veggie in the middle of the eggs & add cheese
- Fold the omelette & flip as it browns
- Place on a plate & enjoy
It's a hearty breakfast that will keep you full for hours. It's also easily customizable to suit your tastes or what you have on hand — you could easily add a leafy green like spinach or chuck in some finely chopped zucchini. In a small bowl, beat the egg whites, water and cream of tartar until stiff peaks form. Take a third of the sautéed veggies and lay it on one half of the omelette. Fold empty side over the veggies with a spatula and pat down to brown the bottom.
