- Heat oil in a large pan on medium high flame heat.
- Add onion and saute for until soft about 3 minutes
- Add garlic ginger and green chilli and cook for 2 minutes
- Add garam masala powder, salt, dry mango powder, pepper powder and coriander leaves and cook for 1 more minutes. Stir constantly.
- Add peas and stir to coat. Remove from heat and add mashed potatoes and mix well.
- Spoon samosa mixture evenly in muffin mould and bake for until golden brown approximately 25 minutes.
- Allow to slightly cool for at least 5 minutes to make sure muffins don't fall apart.
- Remove from mould and serve with tea and tomato ketchup.
