My fiance LOVES carrot cake, and yesterday was his birthday so I decided to look for a carrot cake recipe. He was very specific that he wanted pineapple, coconut and lots of nuts in his carrot cake. I made this cake with a few modifications and he LOVES it!

The ingredients needed to make Carrot Cake:
  1. Get 2 cups flour
  2. Take 3 cups shredded carrots
  3. Prepare 2 tsp baking powder
  4. Make ready 2 tsp baking soda
  5. Make ready 4 large eggs
  6. Prepare 2 tsp ground cinnamon
  7. Make ready 1 1/4 cups vegetable oil
  8. Prepare 1 1/2 cup white sugar
  9. Get 1/2 cup brown sugar
  10. Get 1 cup chopped pecan + 1/2 cup for garnishing
  11. Make ready 2 tsp vanilla
  12. Take 1 tsp ground nutmeg
  13. Take 1/2 tsp salt
  14. Prepare For Frosting
  15. Get 8 oz cream cheese
  16. Take 4 cups powdered sugar
  17. Take 1/2 cup butter
  18. Get 1 tsp vanilla

In a mixing bowl, mix sugar, vegetable oil, and eggs. In another bowl, sift together flour, baking soda, salt, and cinnamon. In a large bowl, whisk together flour, salt, baking soda, and cinnamon. I like using all-purpose flour, but you can substitute some of the all-purpose flour for whole wheat or white whole wheat flour.

Instructions to make Carrot Cake:
  1. Preheat oven to 350. In a large bowl break n whisk eggs, sugar oil and vanilla.
  2. Then stir in flour, baking soda, cinnamon powder, salt, baking powder, nutmeg. Then fold in shredded carrots and pecans
  3. Grease and flour 9 inch baking pan.(I used 2 round ones)
  4. Add the batter to the baking pan and place in the oven to bake for 40 to 50 mins. When finish baking put to cool for abt 1hr
  5. For frosting: In a bowl add powdered(confectionery) sugar, vanilla, soft cream cheese and butter and mix until creamed.
  6. Once cake is cool remove from baking pan and place on a cake rack. Spread frosting to the top and then topped with pecans. (Nb because I made 2 cakes I shave the top of one of the cake to be flat enough then I spread frosting then I place the second cake on top then spread frosting again n all over the cakes).
