- Heat a pan over medium heat and add 2 tbsp coconut oil.
- Add 1tsp mustard seeds,allow them to splutter.
- Now add curry leaves,sliced onions and chopped green chillies.
- Saute and cook until onions are translucent in colour.
- When onion turns translucent add chopped tomatoes and salt.
- Stir and cook tomatoes until they turns soft and mushy.
- Add turmeric powder,red chilli powder,coriander powder, garam masala mix well and cook for 1 -2 minutes.
- Stir coconut milk and add to tomato masala.
- Stir well, simmer curry for 1 minute or just heat the milk and remove from the heat.
- Garnish with chopped coriander leaves and serve with steam rice.
