I have made it the night before and it's fine but I prefer to make it a few hours before hand. In a medium bowl, mash avocados with lime juice and sea salt until just combined, but still a bit chunky. Add in tomatoes, red onion, garlic, lime zest, jalapenos, cayenne and cilantro, mixing well. When serving a crowd, double or quadruple this guacamole. The onion, tomato and mango can be chopped in advance.
