The ingredients needed to make Veg Pulao:
  1. Take 2 cups basmati rice
  2. Make ready Chopped onion
  3. Make ready Chopped tomatoes
  4. Make ready 1-2 slit green chillies
  5. Make ready 1 tsp cumin-corriender powder
  6. Prepare 1 tbsp ginger-garlic paste
  7. Prepare 1/4 th tsp garam masala powder
  8. Take 1 carrot julienne cut
  9. Prepare 1 beans julienne cut
  10. Take Few pieces of cauliflower
  11. Get cubes Capsicum
  12. Make ready 1/4 th cup green peas
  13. Prepare 1 small potato cut into pieces
  14. Get Few kesar strands, 1 tbsp milk
  15. Make ready Salt
  16. Get Oil
  17. Prepare Sugar
  18. Make ready 2-3 drops rose water
  19. Take 4.2 cups water
  20. Take Raisins (optional)
  21. Make ready For tempering
  22. Prepare 1 tsp jeera
  23. Take 1 bay leaf
  24. Make ready 2 cinnamon sticks
  25. Make ready 3-4 cloves
  26. Prepare 1-2 dried red chilli
  27. Take 1 javitri
  28. Prepare 1 black cardomom
  29. Make ready 2 green cardomom
  30. Take 1 biriyani phool
  31. Prepare 1 pinch hing
  32. Get Ghee
Instructions to make Veg Pulao:
  1. Soak rice in water for abot 30 mins. Fry the raisins in a tsp of ghee & keep it aside. Soak few kesar strands in a tbsp of milk. The chopped veggies are shown in the image.
  2. Heat a pan, add ghee. Now add jeera, green cardamom, black cardomom, bay leaf, dried red chilli, javitri, biriyani phool, cinnamon sticks, cloves. Let them splutter a bit. Now add a pinch of hing.
  3. Now add chopped onion & tomatoes, ginger-garlic paste, salt, 1 tsp sugar, turmeric powder, cumin-corriender powder, garam masala powder, slit green chillies and mix everything well. Cook it for about 2 to 3 mins. Now add all the vegetables and mix it. Now cook everything well until oil leaving the pan.
  4. Now drain the water from the rice and add it to the masalas. Mix everything well. Now add 4.2 cups water. Add turmeric powder, salt, 2 tsp sugar. Add 2 to 3 drops of rose essence & mix everything very gently.
  5. Cover the pan and cook it in low flame till water is absorbed by the rice. Now open the lid and add kesar milk & a tbsp of ghee over it. Mix everything very gently. Sprinkle some corriender leaves, topped with some fried raisins. Serve hot with some raita…
