The ingredients needed to make Chole Masala:
- Take 1 cup chole
- Prepare 3 medium onions
- Make ready 2 green chilli
- Make ready 2-3 small pieces of coconut (tukda)
- Take 3-4 cloves garlic

- Get 3 bayleaves
- Get 2 inch dalchini
- Make ready 2 green cardamom
- Make ready 3-4 cloves
- Prepare 1 tsp cumin seeds
- Prepare 1 tsp red chilli powder
- Make ready 1/2 tsp turmeric powder
- Get 1 tsp amchur powder
- Prepare 1/2 tsp coriander powder
- Prepare 1 tsp chana masala
- Get 4 medium tomatoes
- Prepare Salt as required
- Prepare For tadka:
- Take 2 tbsp cooking oil
- Make ready 1 tsp ghee
- Take 1/2 tsp ajwain
- Get 1 inch ginger
- Make ready 2 slit green chillies
- Get 1/2 tsp red chilli powder
Steps to make Chole Masala:
- Soak chole in water for 6-7 hours. Then pressure cook for 5 minutes in high flame and 10 minutes in low flame. You will get soft chole.
- In mixer jar take onion, garlic, green chilli and coconut chunks and grind to make masala paste.
- In a kadhai heat oil, add whole garam masala and fry for a minute on low heat. Add cumin seeds and allow to splutter.
- Further add masala paste, cook for 2 minutes on medium flame.
- Next add cumin powder, red chilli powder and turmeric powder. Mix well and cook for 1 minute.
- Add tomato paste and then amchur powder, chana masala and coriander powder. Mix and cook on low flame. Cook for 2 minutes
- Now add amchur powder, chana masala and coriander powder. Mix well and cook till water evaporated.
- When water evaporates from masala add salt, boiled chana and water for gravy. Cover and boil for 5 minutes on low flame.
- For tempering/tadka - - Half an hour before serving, heat ghee in wok and temper ajwain seeds, ginger juliens and green chilli. Mix it with Chole masala.
- The tadka helps in digestion and enhances the taste. Enjoy Chole masala with poori/ steamed rice. - Thanks
