- In a big bowl add rice, garlic powder, chopped onion,parsley,mashed sweet potato,dried basil leaves,black pepper and 2 Tbsp bread crumbs.
- Add parmesan cheese,mozarella cheese,salt and mix everything well.
- Apply little water on your palm.
- Take a small portion of mixture in your hand and shape into small ball.
- Repeat the same process with the remaining mixture.
- In a wide bowl,mix the flour with water to get a flour paste and keep aside.
- In another plate,spread bread crumbs and keep aside.
- Grease big plate with little oil and keep aside.
- Dip the prepared coquette in the flour paste and then roll it on the bread crumbs until evenly coated.
- Repeat the same process for all the croquettes.
- Heat a deep pan with oil for deep-frying.
- Fry in hot oil over medium heat until brown on all sidea by turning then often.
- Drain the excess oil on a paper napkin.
- Serve hot with sauce of your choice.
