  8. Get 35 GF Rice paper sheets (sometimes it makes more!)
  9. Take for vegetarian, replace the pork mince with minced mushrooms - add some spring onion for extra flavour

Gyoza are most traditionally stuffed with pork and cabbage, but as I served these as a precursor to ginger pork belly, I decided to make half with chicken and sesame and the other half with prawn and chilli. I also treated myself to gyoza press, a fun little gadget for under a fiver that made the business of construction a lot quicker and simpler. I've tried many different sizes and shapes of rice paper wrapper and my current favorites are the six inch rounds, made of either tapioca or rice flour. I will admit I went through about six months of trying to shape my gluten-free gyoza exactly like wheat pot-stickers, and I've come to the conclusion that it just isn't going to happen.

Instructions to make Rice Paper Pork Gyoza (Dumplings) - Gluten-Free:
  1. Mix the pork and vegetables together. Add in 1 tbsp of sesame oil, and the seasonings. Mix well
  2. Follow the instructions for the rice paper. Normally you will need to soak each sheet of paper for 2 seconds in warm water. From there lay it flat on a plate to sit for another minute or two. It will be ready to roll when it feels soft and pliable.

  4. Place 1 tbsp of sesame oil in a pan on medium heat. Add a little olive oil as well to really prevent those dumplings from sticking to the pan.
  5. Cook for about 7 minutes, or until the pork seems to be cooked through. I usually put a cover on the pan in order to "steam" them through if you will. Some recipes recommend putting a bit of water in the pan to help with this process, but I haven't tried that with rice paper yet!
  6. Serve with some of Kikkoman's Gluten Free Soy Sauce! Enjoy!

How to make your own delicious gluten free dumpling wrappers from scratch with a blend of glutinous rice flour and Schar's universal gluten free flour mix.. work on a sheet of parchment paper to prevent sticking. For perfect circular dumpling wrappers, shape with a cookie cutter and re-use all the trimmings.. Rice paper rolls are great for no-cook dishes, plus they're also naturally gluten-free and vegan-friendly. The only downside is that once they've sat for a while, the rice paper wrapper becomes gummy, so spring and summer rolls are best eaten within an hour of making them.
