Let the chiffon cakes cool while you cook a creamy custard filling flavored with sweetened condensed milk. Then spread the hot filling in between the cakes and frost the top and sides. Garnish the yema cake with shredded mild cheddar cheese and cookies if you like. Yema Cake is a Filipino chiffon cake with a custard frosting known as yema which is a custard-like combination of milk and egg yolks.

Steps to make Yema Cake:
  1. Add the pancake mixture, fresh milk, sugar, egg, butter. Mix well.
  2. Put butter on every sides of the llanera/molder. Pour in the mixture (half of the molder only).
  3. Make sure water in the steamer is boiling. Place the molders/llanera. Steam it for 20-30mins.
  4. For the toppings. In a separate pan, mix condensed milk, evap, egg yolk, butter. Mix continuously until you get the desired thickness.
  5. Remove the cake from the molder, place in a container. Top it with the milk mixture/toppings. Add cheese on top.

Light and airy cake with a thick sweet yema sauce. A cake that will surely give you a mouthwatering treat with the cake's softness and delicious frosting. Most Yema Cake recipe contains cream cheese. I think that is how it differs from other cake. It is not really certain where yema cake originated, it is a spin off from yema candy, but the one coming from Tayabas is the most popular.
