The ingredients needed to make Greek Salad:
  1. Take 6-8 Roma tomatoes
  2. Prepare 1 red onion
  3. Get 1 green bell pepper, cored
  4. Prepare 1-2 cucumbers
  5. Prepare Greek pitted Kalamata olives
  6. Get 4 tbsp extra virgin olive oil
  7. Prepare 1-2 tbsp red wine vinegar
  8. Make ready Greek feta cheese (crumble)

I added more oregano (doubled the dressing portions) used mediterranian feta, no olives, and red wine vinegar. Now the red wine vinegar gave it the missing zip in my opinion. Combine vegetables, olives, and parsley in a large bowl. Rest sliced feta on the top of salad.

Instructions to make Greek Salad:
  1. Cut the tomatoes into wedges or large chunks
  2. Cut the partially peeled cucumber in half length-wise, then slice into thick halves (at least 1/2″ in thickness)
  3. Thinly slice the bell pepper into rings.
  4. Cut the red onion in half and thinly slice into half moons.
  5. Place everything in a large salad dish. Add a good handful of the pitted kalamata olives.
  6. Season very lightly with salt (just a pinch). Pour the olive oil and red wine vinegar.
  7. Give everything a very gentle toss to mix; do NOT over mix, this salad is not meant to be handled too much.
  8. Now add the the feta on top. Sprinkle the dried oregano on top.
  9. Serve with crusty bread!
  10. I like to refrigerate mine to 1 or 2 hours before serving but you don’t have too.
  11. Notes- you can use any Tomatoes that you like as many or as little, that goes for everything in this recipe. You can use different colors bell peppers or sweet peppers… I think the more Olive oil you use the better and a slash of vinegar… I know I use way more olive oil than the recipe calls for.. I make everything to taste with this recipe… if you don’t like an ingredient use less of it or not at all. The best part about this salad is you can make a lot of it or just one severing…
