Chilla is a savory pancake that is made with gram flour or different lentils. I make this variation of cheela at times with oats flour. For the oats flour, just grind quick cooking oats or oatmeal in a mixer-grinder and rest of the recipe is the way I make besan chilla. Put the oats and salt in a food processor, and blend until you get the consistency of a mealy flour.

  1. Mix Oats, Buckwheat flour, onions and chillies with some water. Stir and make a Dosa batter consistency. Keep aside for 10 mins
  2. Keep a pan on high flame till it’s hot. Brush some oil. Spread a ladle of the batter on the hot tawa/pan.
  3. Place thin zucchini/veggies slices on top and lower the flame. Flip and cook both sides till crisp and golden.
  4. For dip - grind mint leaves, coriander leaves, green chillies and jeera powder, amchur powder and salt in a grinder jar. Add some water to adjust the consistency.
  5. Serve golden crisp cheela with this dip/chutney and crunchy cucumbers and lettuce.

Tip into a bowl and stir in the baking powder and pepper. Yes, savoury pancakes that we have with a nice chutney. Buckwheat and chickpea flour make a nice base for such pancakes. Those hurried mornings when you woke up late, have just half an hour and still need to have a heavy breakfast because you are going to skip a proper lunch.
