Okara is a good alternative to starches when you're on a diet. Instead of tofu you can use milk or soy milk, adding it gradually to the mixture. Potato gnocchi has a natural sweetness so you can add a little sugar to this okara gnocchi.

The ingredients needed to make Okara Gnocchi:
  1. Prepare 1/2 cup's worth , lightly packed ● Fresh okara
  2. Prepare 1/4 tsp ● Salt
  3. Prepare 2 tbsp ● Katakuriko
  4. Take 1 tbsp Water

To make the okara gnocchi: Process the spinach and water in a blender. Put the okara and cake flour in a bowl and mix well. Once kneaded, make into round, bite-sized pieces, and press down with the back of a fork.. Great recipe for Okara Gnocchi with Prawn and Soy Milk Cream Sauce.

Steps to make Okara Gnocchi:
  1. Stir the okara and salt well in a bowl. Add the katakuriko and mix some more. Add water. The gnocchi batter will become too crumbly if you mix with a spoon or similar after adding water, so squeeze and knead it with your hands instead.
  2. Roll into bite-sized balls as if you're making dumplings. Shape them with your fingers and press down to flatten slightly.
  3. Cook for about 3 minutes in boiling water until the gnocchi float to the top. Done!
  4. Heat some tomato sauce in a frying pan. Mix it up with the gnocchi to serve.
  5. An alternative would be stir-frying the gnocchi to season with salt and pepper, or to serve with grainy mustard and yuzu pepper.

I was selected as a food tester for the Kuyo company. When I was testing some dishes that used okara, I tried to make gnocchi using dumpling flour, rice flour, plain flour and several kinds of starch flour. Wash and finely chop the herbs. Add them to the flour / okara mixture. Okara is a good alternative to starches when you're on a diet.
