Open a package of already prepared gnocchi. Toss everything on a pan, drizzle some olive oil and balsamic vinegar on top. This vegan gnocchi is dressed in the richest, creamiest, zippy lemon sauce that just happens to be dairy-free! Served with hearty kale and seasoned with a garlic and a hint of thyme, this easy meal is pure vegan comfort food.

Steps to make Gnocchi (Veg):
  1. Take cooled and mashed potato and mix flour, salt, and pepper and make a smooth dough.
  2. Take the dough and make a long tube of half inch width. press tube and cut squares of 1 inch each. basically, you are creating pasta squares, it should not be too thick or too thin.
  3. Boil water in a separate pan and boil these squares in boiling water for 4-5 minutes. take out from water and keep aside
  4. Sauce recipe: Make a puree of tomatoes in a blender. if you like garlic and peel and chop two or three garlic buds. Take a deep dish pan and put one tbsp oil, put garlic and don't let the garlic cook or burn, add tomato puree now in Pan, add tomato ketchup and chili sauce, vinegar, a little salt and cook it for a minute.
  5. As soon as the raw smell of tomato is gone put your pasta and cook for a minute and two.
  6. Garnish with Italian herbs and serve.
  7. My Tip: If you have Maggi masala, mix it in sauce at the end of cooking to give it Indian spicy touch

To serve, spoon the gnocchi and vegetable mixture into individual bowls and garnish each bowl with the basil and grated cheese. Meanwhile, in a large pot of boiling salted water, cook gnocchi according to package instructions. Toss gnocchi, adding enough cooking liquid to create a sauce. Remove from heat and stir in basil, cheese, butter, and lemon juice. Line a baking sheet with parchment paper.
