  7. Plate and serve with a drizzle of evoo

You can make risotto using any kind of stock and toss in any kind of protein or veggies you like, but the key to making restaurant quality risotto at home is the type of rice. Also at the end take the risotto off the heat when adding the parmesan and butter. Stir it in and then leave the dish sit, covered, for a minute or two. This little touch will make the risotto. Taste and seaon with salt and pepper as needed.
