  1. Prepare 1 cup black rice
  2. Make ready 2 cups vegetable stock
  3. Make ready 1 small onion finely chopped
  4. Take 1/2 cup mushrooms chopped

  6. Take 1 tbsp olive oil
  7. Get 2-3 tbsp grated parmesan cheese

  1. Heat olive oil in a pan, add finely chopped garlic and saute for few seconds.
  2. Next add finely chopped onions and cook for 1-2 mins on low heat.
  3. Add sliced mushrooms, half of vegetable stock, black rice and let it cook for 6-8 mins until the stock is absorbed.
  4. Again add rest of the vegetable stock, salt, black pepper powder mix well. Cover and cook till the stock is absorbed.
  5. Switch off the flame serve with some roasted cherry tomatoes and herb sauce.
