  1. Get 8 Cups veg broth or stock
  2. Get 2 tbls Olive oil
  3. Take 4 tbls Butter divided
  4. Get 1 medium onion minced
  5. Make ready 3 Garlic cloves finely chopped
  6. Get 1 +1/2 Cups Arborio Rice
  7. Take 1 Cup dry white wine good quality
  8. Get 6 oz baby Spinach
  9. Prepare 1 Cup Parmesan cheese grated
Instructions to make Spinach Risotto πŸ’–:
  1. In a large pan add the Water then add 3 veg stock cubes bring to the boil and keep it warm
  2. In a heavy based pan add the 2 tbls butter heat up then add the Garlic and fry for 1 minute next add the Arborio rice and toast it for 5 minutes stirring. Then add the wine keep stirring until the rice has absorbed the wine.
  3. Add 1 cup of veg stock and stir until the rice has absorbed the stock. Repeat 1 cup at a time until the rice is soft and creamy about 30 minutes.
  4. Next add the baby spinach and stir until the spinach has wilted. Next add the 2 other tbls butter and the cup of parmesan grated cheese stir in and serve.
