- Make ready savoiardi sticks
- Prepare mascarpone cheese

- prepare espressos in advance to cool in the fridge
- beat the egg yolks together with sugar
- add mascapone to the mixture
- separately beat egg whites until stiff
- add egg whites to the yolks+mascarpone mixture
- add bailey's to the espresso
- dip savoiardi sticks in espresso and place into the pan
- add cream on top, and another layer of sticks
