  5. When it dries out add some butter and 1 to 2 tbs of water and bring to a boil.
  6. Pour the sauce over the zucchini and serve with the ground beef. Add some fresh chopped tomatoes to add some fresh taste.

As mentioned above, this ground beef, potatoes and zucchini skillet is a dish born from me looking in the fridge and using whatever I happened to find there. As I had some leftover heavy cream and a little crème fraiche, I added them to the zucchini beef skillet as well. It was a good idea, the dish became. I substituted ground turkey for the beef and half of the zucchini for eggplant and decreased the amount of salt a bit. Incredibly delicious and easy to make zucchini ground beef dish.
