- Marinate bite sized chicken with 1 tablespoon of corn flour, 1 tablespoon of soya sauce for about 30 mins - 1 hour

- Heat up about 1 tablespoon of canola oil in the pan, add minced garlic and ginger. Stir fry until fragrant. Add the marinated chicken, cook until the chicken is no longer pink
- Add in the zucchini, mushroom, carrot, tomatoes etc, cook for few minutes until all veggies are half tender. Add the sauce mixture.
- In another bowl, mix 1 tablespoon cornflour with a bit of water. Pour this mixture at almost the end of cooking, cook a few minutes till the sauce thicken. Correct the taste if needed. Add sesame seeds and scallion if desired. Served warm with rice π
The stir fry was a huge success! So successful, in fact, that my husband and both children took the leftovers for lunch today. The prep time was the longest part of this recipe. Add the garlic, ginger, and zucchini to the skillet. Plus it is a stir fry, and we can think of nothing easier, or satisfying, to cook at the end of a long day.
